Kielbasa and Quinoa Skillet

Kielbasa and Quinoa in an amazing skillet dish that will make eating tons of vegetables (yes, there are lots) super easy, even for kids!!

Equipment

  • 1 saucepan - big enough to cook however much quinoa (or rice) you'd like
  • 1 large skillet
  • 1 cutting board and knife

Ingredients
  

  • 3 cups cooked quinoa (can substitute for rice or noodles if you prefer)
  • 1 can black beans, drained and rinsed
  • 4 kielbasa sausages, sliced down the center, then sliced in 1/2 inch pieces
  • 2 zucchini
  • 1 medium sweet onion
  • 1 small red onion (or medium if you really like onion)
  • 1 bell pepper
  • 3 medium jalepeno peppers
  • 2 cloves garlic
  • 1 Tbsp ground cumin
  • 1 Tbsp dried oregano
  • extra virgin olive oil (or whatever cooking fat or oil you prefer)

Instructions
 

  • Start cooking the quinoa (or rice or noodles), as it takes about 15 minutes.
  • Prep all the veggies:
    Cube the zucchini.
    Dice the sweet onion and red onion.
    Remove seeds and dice bell pepper.
    Remove seeds and mince jalapeños (don't get juices on your face, wash hands right after).
    Smash and mince garlic.
  • Place large skillet on stove on medium heat. Once heated, brown kielbasa, then set aside.
  • Add olive oil or whatever cooking fat you want to use to the skillet, still on medium heat.
  • Once fat is heated (or melted), add all the veggies, cumin, and oregano. Cook the veggies over medium heat, stirring often. When the onions become slightly translucent and the zucchini loses some of it's crunch (about 5-6 minutes), add the black beans, quinoa (or rice or noodles), and about 1/2 cup of water. Continue cooking, stirring often, for about another 5 minutes.
  • Serve hot, enjoy!

Notes

As mentioned in the recipe, the quinoa can be substituted for rice or noodles. This dish is awesome, veggie packed, and our kids loved it - so it's a total win of a recipe!
