This is a family favorite, so having freeze dried bbq pulled pork and slaw is going to be awesome!
For this, I did 3 trays of the pork to 2 trays of the slaw..
When I made bbq pulled pork for dinner, I tripled the amount of the pork and the slaw I made to ensure I had some to freeze dry. Our family really does love this meal, so my plan is to put it into single serve mylar bags when it’s finished. We shall see…
Nothing was frozen when I put it in, but it was all pretty cold. It was in the fridge overnight and we keep our fridge at a pretty low temp. To prep it to go into the Ice Queen freeze dryer (Harvest Right Home Pro Medium), I spread things out on the trays as evenly as I could.
Hopefully it all turns out awesome, I’m very excited to see how it is in the end:)

The freeze dried bbq pulled pork turned out great! It’s super dry, ready to be packaged up. I’m putting this in mylar bags. The slaw, however, did not fare so well. Most likely because it has some mayo in it, and that’s a bit oily. I am going to put the slaw in mylar bags with one clear side so I can easily see if it’s going bad.
I think next time, I’m going to do just the cabbage and carrot, without any mayo and stuff in it. Because that by itself is good with pulled pork and it wouldn’t freeze dry quite so weirdo, ha!
In both the mylar bags of pork and the ones of slaw, I added oxygen absorbers (I use Wallaby ones because I like the way they’re packaged and they’ve always worked well for me), then I sealed them up.
Just how long did freeze dried bbq pulled pork and slaw take to finish?
The time for this was a bit odd. The Ice Queen stopped at 22 hours and 18 minutes, then I added 2 more hours because of the slaw. Then I added another 2 hours again, because of the slaw. Still came out a bit oily though. Total time in was 26 hours and 18 minutes. The pulled pork could have been done the first time though, if it was all by itself.
Defrosted the Ice Queen freeze dryer into a 5 gallon bucket, as usual:) Once it’s finished defrosting, on to the next thing! Woohoo!
