This is the good stuff – freeze dried ice cream sandwiches!
So not quite like space ice cream because of the sandwich part.. but these are SO GOOD!
Not everybody likes space ice cream, but I sure do! And these freeze dried ice cream sandwiches came out great! They look exactly the same coming out of the freeze dryer as they did going in. Something I thought would not happen with ice cream, lol.
Obviously, the ice cream sandwiches were pre-frozen, haha. So all I did was cut them into fourths and let the Ice Queen (Harvest Right Home Pro Medium freeze dryer) do her thing!!
I was able to fit 8 ice cream sandwiches on each freeze dryer tray, for a total of 40 sandwiches:)
I will eat every single one of these if someone doesn’t stop me.
I’m not even kidding, and I don’t have much of a sweet tooth! Freeze dried ice cream sandwiches are amazing! Sometime in the future, I plan to also freeze dry just regular ice cream, no sandwich part. And now I can’t wait for that day to come!
For the storage of these, I did use mylar bags. I opted for ones with one side clear so we can see what’s inside (freeze dried candy is coming soon, and they’ll be in the same bags). I added an oxygen absorber (I get mine from Wallaby), squeezed out what air I could without crushing anything, and then sealed it with the Harvest Right Impulse Sealer that came with my machine. I then labeled them and put them on my shelf.
So how long did it take to freeze dry ice cream sandwiches?
From start to finish, freeze drying ice cream sandwiches took 17 hours and 20 minutes total.
The defrost was required after this batch, so I started that and let the Ice Queen defrost, with the water going into a 5 gallon bucket on the floor.
