Freeze dried onions – so. many. onions.

Freeze dried onions eliminate the need to take up my freezer space!

I use onions all the time, so I really wanted to freeze dry a bunch of them.

There were some shallots thrown in there too.. don’t want to forget about those little guys:)

In this freeze dryer batch, my 6th batch to be precise about it, I had white onions, sweet onions, and the shallots I just mentioned. I had the shallots and white onion already in the freezer, but I wanted the sweet onion to be pre-frozen as well. I chopped it up the night before doing this batch and put it in the freezer to give it plenty of time to get nice and cold.

Then I put them all on trays, keeping things separated, in fairly even layers. Put the trays into the Ice Queen, and clicked start! (The Ice Queen is just what I named it, it’s actually a Harvest Right Home Pro Medium freeze dryer.)

They also just look pretty, lol.

Freeze dried onions are just so awesome to have! They reconstitute well, have phenomenal flavor, and take up zero space in my freezer or on my counter, haha.

I put these into mason jars with oxygen absorbers, sealed them with a jar vacuum sealer (I use this one: Electric Mason Jar Vacuum Sealer), and put them on our shelf:)

So how long did it take to freeze dry ice cream sandwiches?

The onions (and shallots lol) took 16 hours to freeze dry.

The defrost was needed after this batch. It’s about a 2 hour process, so I started that and let the Ice Queen defrost. I have the water going into a 5 gallon bucket on the floor. I have the drain hose taped to the inside wall of the bucket to ensure it doesn’t come out while it’s draining:)
