Excited to try freeze dried pickled shredded carrots!
Why freeze dry the pickled shredded carrots?
I really like them, straight out of the jar. So I wanted to see if they’d come out of the freeze dryer super crunchy and ready to be an awesome salad topper!
For the shredded carrots, I just laid them on the tray in as even a layer as I could. They were sharing a tray with pickles, so I didn’t have too much space for them. I only did one small jar as a test run:)
This batch also included the baked beans, green olives, and pickle slices. So I had just part of a tray for the carrot, half a tray of the olives, three trays of baked beans, and the rest was pickles. I did pre-freeze all five trays, then into the Ice Queen freeze dryer (Harvest Right Home Pro Medium) they went:)
I’m excited about these – I love crunchy stuff in my salads and I hope this is awesome!

I am so thrilled with these shredded carrots!!! They turned out perfectly! I will definitely be using them as salad toppers and will be making more in the very near future:)
I put the freeze dried pickled shredded carrots into a small jar. I then added the oxygen absorbers (I use Wallaby), then I sealed them using our handheld rechargeable jar vacuum sealers.
So how long did everything take?
Considering they were also with the sliced pickles, baked beans, and green olives, total time was 23 hours. I think without the green olives, time could have been cut down by several hours.
With this batch taking so dang long, I definitely needed to defrost the Ice Queen after, so I just let it do the auto-set 2 hours and that was perfect.
