Equipment

  • 1 Large stock pot

Ingredients

  • 1 pot Chili - this recipe assumes you already have chili made - if not, check out or chili recipe, linked below this recipe
  • 2-3 cups large macaroni noodles - base it on the noodle to meat and/or bean ratio you'd like any noodles can be used, but we use macaroni noodles because it is called chili MAC after all
  • 1-2 cups shredded cheddar cheese add more or less, depending on what you like - it's better if the cheddar is home shredded, not from a bag

Instructions

  • Start with your chili - if you just made it and it's still on the stove, that's awesome! If not, put your chili in a pot and heat it up.
  • If the chili is super thick, add some water to it so the noodles will have the liquid needed for them to cook properly.
  • Once hot on the stove, add the macaroni noodles to the chili and stir them in. Place the lid on your stock pot.
  • Cook for about 30 minutes, removing the lid to stir every once in a while.
  • Once the noodles are fully cooked, remove from heat and add the cheese. Stir the cheese in really well - it will melt as you stir. Add as much cheese as you'd like, making sure you get everything at the bottom of the pot all mixed in with the cheese.
  • ENJOY!!!!

Enjoy this any way you’d like!

The chili mac can be modified in a variety of ways. Here are just a few we’ve thought of:

  • Change up the cheese – a good Mexican cheese mix or swapping to mozzarella can change the flavor and be super good!
  • Want it to be more of a Mexican dish? Aside from just changing the cheese, you can also add salsa. This gives a new awesome flavor to the entire dish.
  • Swap noodles for different ones – not really a flavor changer, but makes it feel and look different, which can be fun.
  • Spice it up! This recipe and the chili I make, are not very spicy. Both recipes can be super spiced, if desired. Simply add some hotter peppers (jalapeños or habaneros), add chipotle chili spice, or add in some hot sauce. The possibilities are endless!
