Chili Roast Beef

Chili Roast beef is so good!

This recipe is keto-friendly, unless you eat it over rice or pasta. Kids approve, too, which is always a bonus!

Chili Roast Beef

SImple ingredients, long cook time (but you don't have to do much), delicious beef!

Equipment

  • 1 cutting board (with knife, ha)
  • 1 dutch oven

Ingredients
  

  • 2 lbs beef roast (cut depends on personal preference), but into 2-3 inch chunks
  • 2-3 sweet peppers, seeded & chopped
  • 1 medium sized white onion, roughly chopped
  • 1 Tbsp dried parsley or about 2 Tbsp fresh parsley, finely chopped
  • 1-2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp pepper I prefer white pepper for this, but any pepper will do
  • 2 Tbsp cooking fat butter, ghee, whatever

Instructions
 

  • Preheat oven to 350F.
  • Chop beef into cubes, chop up bell peppers, onions, and parsley (if using fresh parsley)
  • Place your dutch oven on the stove over medium heat.
  • Melt/heat your cooking fat in the dutch oven.
  • Once fat is hot, add the sweet peppers and onion, cook for about 5 minutes, stirring regularly to ensure nothing burns or sticks.
  • Add 2 cups water to the dutch oven, add beef, parsley, garlic powder, pepper and chili powder, stir well.
  • Add enough extra water to cover the beef, bring to a boil.
  • Put lid on dutch oven, and transfer it to the oven and cook for 3 hours, checking every hour to flip beef if needed.
  • Serve over other veggies or rice (obviously, rice would make this not keto-friendly).

Notes

This is a keto-friendly recipe. When I've made this in the past, I've eaten it over a plate of spinach or other veggies, and served it to our kiddos over rice. Either way is good. Obviously serving it over race makes it not keto, but the grownups can do veggies 🙂

Can this be made in a crockpot?

Sure! Chili roast beef is great for the crockpot! You may want to brown some of the items first, but if you do this in a crockpot, add all the ingredients, set it for low 8 hours or hight 4 hours, and enjoy!!
