Easy Chicken Parmesan

This chicken parmesan recipe is delicious!

To me, this chicken parmesan takes minimal prep, but it may seem like a lot to others. It’s hard to tell, lol. More photos after recipe, if interested. It is kid approved, it’s super yummy, and I hope anyone who makes it absolutely loves it 🙂

Easy Chicken Parmesan

This chicken parmesan recipe is super easy and is 100% kid and hubby approved!

Equipment

  • 1 large cast iron or ceramic coated skillet needs to be able to transfer from stove to oven - other option is to use two skillets, one for stovetop and one for oven
  • 1 large bowl big enough to hold all the chicken
  • 2 bowls these can be silver bowls or large eating bowls, doesn't really matter
  • 1 tongs
  • 1 basher this is optional, I needed it to bash croutons into breadcrumbs

Ingredients
  

  • 4-5 large chicken breasts
  • 4-5 eggs
  • 1 cup flour may be less, I start with about 1/2 cup then add more if needed
  • 1 cup bread crumbs like flour, may be less, I start with a small pile, then add more as needed
  • 1/8 - 1/4 cup olive oil extra virgin is best, I think
  • 2 jars spaghetti sauce or use your own - I used my own and used two pints
  • 1-2 cups shredded Parmesan cheese if you want less, use less - I also think it's better when I shred my own parmesan instead of using bags of it
  • 2 tbsp sweet basil optional
  • 1 tbsp white pepper optional
  • 1 tbsp onion powder optional
  • 1 tbsp garlic powder optional

Instructions
 

  • Crack all the eggs into one of the three normal sized bowls and scramble.
  • Put flour in the other normal sized bowl.
  • Cut up the chicken breasts into strips about 1 inch wide. If you prefer to leave them as whole breasts, you can do that, or you could do smaller pieces. Just note cook time may change if the pieces are bigger or smaller.
  • Pat chicken dry.
  • Put skillet on stove, add some olive oil to coat the skillet, and turn it on medium-low heat.
  • Turn the oven on now so it preheats - set oven to 350° F.
  • Put chicken in eggs, then in flour. Do this for all chicken, setting it aside in the larger bowl as you go.
  • Once all chicken is coated in egg and flour, dip each piece in the egg again, and put it back in the same bowl.
  • Pour breadcrumbs (or bashed up croutons) into the bowl with the chicken and toss it. Try to coat all pieces of chicken evenly if possible.
  • Lay all the chicken in the skillet to brown on one side (takes maybe 5 minutes or so).
  • Flip all the chicken (using tongs) to brown on the other side.
  • Cover the chicken with the spaghetti sauce, add other spices (sweet basil, white pepper, garlic powder, and onion powder), move sauce around to ensure spices get mixed in a little bit and the chicken is fully coated.
    *If using separate skillets or pans, transfer the chicken to the one that'll go in the oven, then pour spaghetti sauce over it all and add spices.
  • Move the skillet to the preheated oven to bake.
  • Let it bake for 30 minutes.
  • Remove from oven and sprinkle Parmesan on top. Return to oven for about another 10 minutes.
  • Let it cool a little bit before eating. Add a veggie or something as a side, if desired, then enjoy!

Also, the spices can be modified to whatever you’d like. More, less, different – this is a simple recipe, so it’s a great one to experiment with!
