Quick & easy egg bites are fantastic!

This recipe for egg bites is super easy to make, kids love it, it freezes well, and is totally worth giving a shot!

Simple breakfast, easy to make, freezes well

Equipment

  • 1 Muffin tin
  • 1 Mixing bowl for scrambling up the eggs

Ingredients
  

  • Eggs approximately one medium/large egg per muffin spot
  • Vegetables of your choice, chopped small
  • Cheese optional
  • Seasoning optional

Instructions
 

  • Preheat oven to 350F
  • Grease muffin tin
  • Crack eggs into a bowl (approximately one medium/large egg per muffin spot), add spices, beat eggs and spices well
  • Chop all veggies you'd like included
  • Place veggies in each muffin tin spot
  • Pour egg and spice mixture over the veggies, filling each muffin slot about 1/2 to 2/3 of the way full
  • Bake for 10-14 minutes

Egg bites are super customizable!

These egg bites are super easy to customize! Here are just a few ways to modify the recipe:

  • Change up the spices
  • Change up the vegetables
  • Add cooked bacon and/or sausage
  • Crack each egg individually over the veggies/meats for a sunny side up version

Great for on the go!

Egg bites freeze very well and need minimal time to be heated back up. They will last up to three months frozen! To freeze, simply allow the egg bites to cool all the way after baking, then put them in a ziplock bag or other freezer safe container, and freeze.

These are also fantastic for on the go meals! Egg bites will last several days when refrigerated, so taking them on a camping trip is a great idea. Waking up while camping to a super quick and simple breakfast is awesome!
