Fabulous Frittata

Is this really a fabulous frittata???

Yes, it’s a fabulous frittata!! And I did tag it as “keto-friendly,” even though the sweet potato is NOT keto-friendly. Oh no! Now what?? Skip the sweet potato, lol. You can make this without sweet potato and it’ll still be dang amazing!! 🙂

Fabulous Frittata

So so good and super easy!

Equipment

  • 1 medium sized skillet
  • 1 glass pie dish or cast iron skillet has to be able to go in the oven
  • 1 cheese grater for the sweet potato, so a normal handheld one works best

Ingredients
  

  • 1 large sweet potato or 2 medium sized ones - SKIP THIS INGREDIENT TO BE KETO-FRIENDLY!
  • 1 Tbsp cooking fat bacon great, butter, ghee, coconut stuff, etc.
  • 1/3 pound meat of your choice ground beef, sausage, ham chunks
  • 12 large eggs
  • 1/2-1 cup spinach can use kale, or skip this all together
  • 1/2 tomato, sliced optional - skip if making this keto-friendly
  • bacon, chopped into bits optional
  • shredded cheese of your choice optional

Instructions
 

  • Preheat oven to 350F.
  • Use half of the fat to coat the inside of your pie pan (or cast iron skillet)/
  • Put the other skillet on stove, on medium heat, and add the remaining fat (butter, ghee, whatever) to melt.
  • Shred the sweet potato while the butter is heating up (skip all sweet potato to make this keto-friendly).
  • Once fat is melted, add shredded sweet potato and cook, flipping once or twice, to make hash browns (again, skip this for keto-friendly).
  • Place hash browns in pie dish, mushing them down with a fork (yep, another step to skip if making this keto-friendly, haha).
  • Cook your meat, browning it well, and add it to the pie dish or cast iron skillet on top of the sweet potato (or on top of nothing if skipping the sweet potato). If using pre-cooked meat, obviously it doesn't need to be cooked again, so just add it on top of the sweet potato.
  • Beat all eggs together, add spinach or other green, and mix well.
  • Pour egg mixture over the meat and sweet potatoes.
  • Lay tomato slices on top (skip tomato if making this keto-friendly). Sprinkle bacon and cheese on top as well (if using).
  • Bake for 30 to 45 minutes, checking every 10 minutes after the 30 minute mark. Once all eggs are no longer watery on top and the edges are slightly browned, this dish is done!

Notes

Sweet potato is NOT keto-friendly! However, frittatas do not require sweet potato. So if you want keto-friendly, just skip that ingredient.   

These are awesome as single serve meals as well!

Another wonderful and easy way to make frittatas readily available for anyone, family, guests, etc., is to make single serve frittatas. I use small Pyrex dishes that have sealing lids to do this. I simply make the same recipe, but split it into 4 as I go. These also need to be watched a little more carefully when baking, as they tend to have a shorter bake time than the larger frittata.

I love it when recipes are easy to modify.. things can get really boring, especially when on a diet that’s somewhat limiting (think keto, Whole30, Atkins, etc.).

These are some excellent and easy ways to modify this fabulous frittata recipe to completely change how it tastes:

  • Use already flavored sausage as the meat.
  • Use ground turkey instead of beef.
  • Remove sweet potato all together – this is already mentioned in the recipe, as this is how to make this recipe keto.
  • Add different veggies – broccoli is a great one, shredded carrot works really well, etc.
  • Swap out the sweet potato for regular potato.
  • And, and, and… the possibilities are endless! 🙂
