Garlic Parmesan Crusted Potatoes

These garlic parmesan crusted potatoes rock!

This recipe is awesome, kids like it, perfect to have instead of mashed potatoes with stews and things. These garlic parmesan crusted potatoes are also super easy, with minimal cleanup (huge bonus)!

Garlic Parmesan Crusted Potatoes

Equipment

  • 1 Baking dish
  • 1 Small bowl for mixing

Ingredients
  

  • 1 small bag Fingerling potatoes (approximately)
  • 3/4 cup Parmesan cheese (powdered kind)
  • 2 Tbsp Extra virgin olive oil or any oil you have
  • 1/8 cup Garlic more or less to taste
  • 1 tsp Paprika optional
  • 1 tsp Pepper optional

Instructions
 

  • Preheat oven to 350F
  • Pour olive oil into baking dish, use a paper towel to coat dish
  • Mix Parmesan, garlic, and any other spices together
  • Spoon or sprinkle the Parmesan and spice mix onto the oil in the baking dish, use the spoon to make an even layer on the bottom of the dish
  • Cut fingerling potatoes in half, and layer them in the baking dish, flat (cut) side down
  • Bake for about 45 minutes, until the bottom mixture is a crust

Notes

Other vegetables, such as green beans can be added to this, if desired. 
Other spices can also be added, depending on what you're serving it with.

From adding more spices to extra veggies, this garlic and parmesan crusted potato recipe is super easy to customize! We’ve added green beans, carrots, onions, and a few other things to it and it still comes out fantastic every time!

Sometimes I like to make it a little spicier, so I add some chili powder to it.

It’s great to pour thickened stews over and use in place of mashed potatoes when you just don’t feel like making or eating those.

Kids like it, grown ups like it, and it’s easy. Being easy really is the best part. Well, that and the extremely minimal cleanup, haha!
