Pancake Bites

Pancake bites are easy to make and freeze really well!

Fairly quick and simple, this recipe for pancake bites can be done plain or with added meats, such as bacon and/or sausage. A favorite recipe for sure!

Pancake Bites with Sausage or Bacon

Easy to make, freeze well, everyone loves them!
Prep Time 10 minutes
Cook Time 15 minutes
Meat cooking time (if adding meat) 20 minutes
Total Time 45 minutes

Equipment

  • 1 Muffin tin more if you're making a big batch
  • 1 Mixing bowl
  • 1 Skillet for cooking the sausage and/or bacon - not needed if you're not adding meat(s)

Ingredients
  

  • 1 pound Sausage and/or bacon if making plain pancake bites, this is not needed
  • 1 cup pancake mix if you don't have any pancake mix, see notes below to make your own
  • 1 cup Water or milk
  • 1 Egg
  • 1 Tbsp Extra virgin olive oil can use another type of oil, if desired

Instructions
 

  • Cook up the sausage and/or bacon, if adding it to the pancake bites, and chop into pieces
  • Preheat oven to 350F
  • In a mixing bowl, add pancake mix, water, egg, and olive oil - mix well
  • Grease your muffin tin
  • Pour the pancake batter into the muffin tin, filling each about 1/2 way
  • Add sausage and/or bacon to each spot in the muffin tin
  • Bake for 12 to 14 minutes

Everyone loves pancake bites!

Just like our Egg Bites, these pancake bites are great for on the go things like camping and trips. These are good in the oven for several days and can be frozen for up to three months!

When freezing these, make sure they’re totally cool before putting them into a freezer safe container and storing them.
