Paleo Flatbread

Delicious flat bread, easy to make

Equipment

  • 1 Mixing bowl
  • 1 Medium to large sized skillet

Ingredients
  

  • 1 can Organic coconut milk, unsweetened ~13ish ounces
  • 1 cup Almond flour
  • 1 cup Tapioca flour
  • Clarified butter, ghee, or olive oil for pan, if using non-stick

Instructions
 

  • Whisk together all ingredients.
  • Heat a pan over medium-high heat. You may need to use a little clarified butter (or ghee or olive oil) here if you aren't using a non-stick pan.
  • Once the pan is heated, scoop batter into the center of the pan. You can make these thick, like pancakes, or thin, like crepes.
  • Cooking time will vary based upon thickness of the batter. Once the batter puffs up or the batter in the center is no longer mushy (like watching a pancake cook), flip and cook the other side.

Notes

When making flatbread, it is important to keep an eye on it in the pan, and remember that it does take time. This isn’t instant, and turning up the burner heat is not going to help move things along. Be patient, let it cook, and when it puffs up, flip it!
